What do the different specialties actually do for your gladiator do they give him a certain bonus only members of that specialty get?

They get access to their own talent tree and limited access to the other two.

Oh, as well as heavy armor for War with access to pikes, medium armor for Theatrics with exotic weapons and light armor for Rage.

Your specialty actually means a lot. For starters you have your own skill tree as BlkTmplr pointed out. It also defines what weapons and armor you can use, but a huge thing it does is define what fighting styles you will be able to employ in the arena. For example only Rage gets access to Berserk.
