What is the corresponding amount of "Defense" every 1 armor gives? Or are the two completely different variables.

For starters, nobody knows for sure how Attack and Defense work exactly (except Nate). It is certain that high Defense reduces the received damage somehow. From my experience, the damage/Attack value seems to be compared to the Defense value and based on the result, the attack is either parried if it's too weak, or the damage is reduced by some number. Spites' attacks for example get parried successfully more often than the attacks of the other races, probably because of the lower base damage.

Armour is different from Defense for sure. It reduces damage in a more straight-forward manner and that is it's main purpose. What's important is that the armour "points" that each piece gives do not exactly represent its protectiveness. Heavy armour in general is considerably better in damage reduction than medium armour despite the seemingly not-so-great difference between their values. Also, when the armour types and values are identical (for instance - Plate Mail and Full Plate Mail), the heavier armour piece can be expected to deflect attacks more often and probably to reduce bleeding and criticals more successfully.
